FISH EN PAPILLOTE
Ingredients:

1-2 fillets of white fish (such as cod, halibut haddock

1 lemon, thinly sliced

Red onion, julienned or thinly sliced

Tomato round slided or cherry tomatos.

4-5 pieces sparragus

2 tablespoons olive oil

splash aji amarillo or any chilli,

tablespoon fresh chopped parsley or cilantro

Salt and pepper to taste

Parchment paper
Instructions:

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Parchment Paper: Cut a large piece of parchment paper.

Assemble the Ingredients: Place one fish fillet on the parchment paper sheet. Season the fish with salt and pepper, and drizzle with olive oil.

Add Vegetables: Place the vegetables (red onion, tomato slices, and asparagus) on top of and around the fish fillets, with the asparagus placed beneath the fillet.

Add Lemon and Herbs: Place lemon slices on top of the fish and sprinkle with fresh parsley or cilantro.

Seal the Packet: Fold the parchment paper like a candy wrapper. Starting at one end, tightly fold the edges over several times to seal the packet, ensuring no steam escapes during cooking.

Bake: Place the sealed packets on a baking sheet and bake in the preheated oven for about 18-20 minutes, depending on the thickness of the fish fillets. The fish should be opaque and easily flake with a fork when done.

Serve: Carefully open the packets (watching out for the hot steam) and serve directly in the parchment for an elegant presentation.
